Recipe: potatoes are pealed and sliced round then pan-fried in pork fat, known in Andros as glina. Eggs are beaten and mint, salt and pepper is added. When potatoes are almost done the beaten eggs are added. Dish is served warm and garnished with sausages made with the traditional recipe of Andros on the top.
Depending on the season the recipe may vary and potatoes may be replaced by cucumbers or fresh broad beans.
